This creole bean salad is one of my favorite summer salads because it is so easy to prepare, healthy, refreshing, and delicious! The color combination of the beans and vegetables is quite appealing.

Ingredients

1 can (15 oz) Chickpeas, drained and rinsed

1 can (15 oz) cannellini beans, drained and rinsed

1 can (15 oz) red kidney beans, drained and rinsed

1 cup chopped bell pepper (green, red, or yellow)
- 1 small red onion, finely chopped
- 1 tomato, remove seeds and chopped
- 1 celery stalk, chopped
- 2 tablespoons fresh chopped parsley or cilantro
- ¼ cup olive oil
- 1 tablespoon sugar or honey
- 2 tablespoons lemon juice
- 1 garlic clove, minced

1 tablespoon Creole mustard or Dijon mustard

1 teaspoon Creole seasoning (or to taste)

Directions
Whisk all the seasoning ingredients in a medium bowl and set aside.
- In a large bowl, add chickpeas, kidney beans, cannellini beans, bell pepper, onion, celery, tomatoes, and parsley. Toss gently to mix.
- Pour the Creole dressing over the bean mixture. Gently toss the salad until evenly coated with dressing.
- You may serve it immediately or refrigerate (covered) for at least 1 hour before serving to allow the flavors to meld together.
Recipe Note
- Drain and rinse canned beans before adding them with the rest of the salad ingredients otherwise the canned beans' starch can ruin your salad dressing taste.
- Taste the salad and adjust the seasoning as needed.
- You can substitute or add other beans like Green beans, black beans, boiled peas, or corns.
