We did not get to enjoy a lot of fast-food burgers and pizzas joints growing up. We simply didn’t have much money to waste, but one thing we always had was a home-cooked meal. Sunday to Sunday, Dinner was made.
Now, how does this all tie back to eating too much chicken? Well, like I was saying, mama worked at the chicken farm. And the chicken farm had a lot of chickens! She only made about $5.15 an hour, and even though she was a prayin' woman, there were days when we barely had money for food after her long shifts at the plant. Transfer the chicken drumstick to the cassava flour mixture and coat it thoroughly, pressing the flour mixture onto the chicken to ensure good coverage. Set aside on a plate or wire rack and repeat the process with the remaining chicken pieces.
Carefully add the coated chicken pieces to the pan once the oil is heated.
Fry the chicken for around 8-10 minutes per side, or until the chicken is well-cooked and golden brown.
