Ingredients
- Olive oil spray
- 3 pounds pork shoulder roast boneless
- 1 tablespoon garlic powder
- 1 tsp smoked paprika

2 tablespoon Cajun Crabby Seasoning
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
Directions
Line a rimmed baking sheet with foil and fit it with a wire rack. Use olive oil spray to coat the wire rack.
- Add the garlic powder, smoked paprika, cajun crabby seasoning, sage, and thyme in a small bowl.
- Pat dry pork with paper towels. Place it on a wire rack. Rub the spice mixture evenly over the roast. Spray olive oil liberally on its top.
- Preheat your oven to 425°F. Let the pork roast come to room temperature for about thirty minutes as the oven warms up.
- For the pork roast, insert a meat temperature probe in the middle of the pork and put it in a hot oven. Once the meat thermometer reaches 145°F, roast it for another 15 minutes, then reduce the heat to 375°F. It takes 75 minutes in my oven which is approximately 25 minutes per pound.
- Remove the roast from the oven. Cover it loosely with foil and set aside to rest for twenty minutes. Remove the butcher twine from the roast, then slice and serve.
