These creole roasted vegetables are great as a side dish with baked chicken, Crispy Fried Chicken, Cajun Gumbo, or any other main course.

Storing Guidance

  • Made Ahead: The vegetables can be seasoned and refrigerated for up to six hours before roasting.
  • Refrigerate: Leftover Creole Roasted Vegetables can be kept in the refrigerator for up to four or five days after roasting. Just remember to wait for them to cool completely before storing them in a tightly sealed container.
  • Reheat: Before serving, reheat in the air fryer, or oven. Alternatively, you may just add these Creole Roasted Vegetables to the dish (soup, casserole, rice, pasta, etc.).
  • Freezing: These creole-roasted vegetables are easy to prepare and do not necessitate freezing. And, I think the roasted vegetables may turn mushy when thawed.

Recipe Notes

  • Choose vegetables that cook at about the same time and with a comparable texture; if needed, add vegetables at separate times.  
  • To prevent the vegetables from adhering to the baking sheet and to make cleanup easier, line it with parchment paper.
  • Don't overcrowd your baking tray, as this will help them roast evenly. If needed, use two baking trays.
  • Roast on your oven's lower rack for better circulation of heat.

Variations

This Creole Roasted Vegetables dish is so versatile and can be customized to a variety of flavors.

  • Change up the Vegetables: Feel free to use any vegetables you like or have on hand. I used sweet potato, carrots, aubergine, potatoes, zucchini, red onions, tomatoes, and bell pepper in this recipe. But you may also add other veggies, such as celery, fennel, cauliflower, pumpkin, and broccoli, that require similar roasting times. 
  • Cheese: For some cheesy goodness, evenly sprinkle the grated parmesan cheese over the top of the vegetables (after spreading on the baking sheet). Bake according to recipe.
  • Add protein: For a more hearty dish, you can add chicken, tofu, or sausage to the vegetables before roasting.

Which Vegetables Are Best For Roasting?

Here are a few of my favorite roasted veggies:

  • Root vegetables, like carrots, beets, radishes, sweet potatoes, potatoes, butternut squash, onions, garlic, etc.
  • Cruciferous vegetables, such as broccoli, cauliflower, cabbage, collard greens, bok choy, and Brussels sprouts
  • Other vegetables (aubergine, zucchini, mushrooms, bell pepper, asparagus, and slowly cooked tomatoes).

How Long To Roast The Vegetables?

  • It depends on the veggies' sizes. Make sure that vegetables that require more time to cook are chopped smaller.
  • Additionally, it depends on your liking for them to be, crispy or crunchy.
  • If they begin to start burning from the outside but are not yet fully cooked from the inside, wrap them with aluminum foil.

Are Creole Roasted Vegetables Still Healthy?

Yes. Roasting or broiling harder vegetables makes them more palatable and digestible while preserving the most important nutrients.
