Making homemade Cajun fries is easier than you may think. Once your potatoes are done cooking and crisping, turning them into Cajun fries is as simple as tossing on the seasoning. After one good finger lick, you’ll be craving these just like I do.

Ingredients

2 pounds large russet potatoes
- Canola or vegetable oil, for deep frying

2 teaspoons Cajun seasoning
Directions
Cut and soak the potatoes: Slice the potatoes into sticks and soak them in ice water for at least 30 minutes to remove excess starch, which helps prevent sticking during frying.
Blanch the fries: Pat dry the fries thoroughly, then blanch them in 260ºF oil in batches until just softened.
Fry the fries: Increase the oil temperature to 350ºF and fry the fries until they are golden brown and crispy.
Season the fries: Toss the fries in Cajun seasoning and sprinkle with chopped fresh parsley. Serve with your favorite sauce on the side.
Recipe Note
- Russet potatoes work well in both baking and frying. If you're seeking convenience, frozen French fries are a good option. You can use any type of French fry you like; I prefer a thin-cut style. There are multiple options: curly fries, steak fries, and crinkle-cut fries.
- You can also bake or air fry your Cajun fries.
- To ensure that the seasoning sticks to the fries rather than slipping off, add it while the fries are still hot.
